Chef German’s path reads like a movie script. He started as a dishwasher, worked his way up, and eventually ran Valentino at The Venetian for 12 years. Now he’s teamed up with his son Junior to build something different: a neighborhood restaurant with fine-dining execution and the warmth of a family kitchen.
Where Everybody Knows Your Name
The food alone doesn’t explain the devotion. It’s the experience. Junior has an almost supernatural memory. He’ll recall exactly what you ordered three years ago. Think Cheers, but with better pasta. That personal touch turns dinner into something that sticks with you.

Aromi runs a five-course tasting menu that changes every week. Regulars never get bored. During my visit, the lineup included:
- Pan-seared scallops with textbook caramelization
- Lobster tail spaghetti, rich and unapologetically indulgent

- All four house desserts to close things out

Junior also works as a sommelier, and he’s built one of the more interesting wine lists in the city. Casual sippers and serious collectors both find bottles here they won’t spot anywhere else in Vegas.
